I recently ate fish at a restaurant in Short Hills, NJ, which
was prepared by a process called "blackening". This consisted
of coating the fish with a mixture of black pepper, cayenne
pepper, and other spices. The result was delicious, very
spicy (hot), but surprisingly without destroying the subtle
flavor of the fish. This is apparently a Cajun style of
cooking. If anyone knows the secret of preparing "blackened"
fish, I would appreciate mail or a response to the net.
