Here's an easy Japanese appetizer recipe: pour some soy sauce, grate in fresh ginger to taste, finely mince scallion and add to taste; cut up your tofu (fresh and white with soft texture and stored in clear,daily-fresh water, please) and dip in sauce. Enjoy.

It's also tasty if you add a good splash of lemon juice.
