I had a opened but tightly closed bottle of oyster sauce in my kitchen cabinet for about 2 weeks. I looked at it yesterday and it was getting a case of the white fuzzies. Should oyster sauce be refrigerated to stop the growth of mold or did I have a bad bottle of oyster sauce? It was such a pity to throw the whole bottle away. I just LOVE oyster sauce! Oyster sauce should be refrigerated once opened and you wipe off the excess around the bottleneck after every use.

Have you noticed a wide variance on the price/quality of oyster sauce ? Cheap oyster sauce tends to be very salty. As much as I like oyster sauce, it is easy to overdo it. Everything tastes the same after a while.

I've had success storing oyster sauce in the fridge for over a month... I usually use up a bottle within a month though, so can't really say how much longer it might last. Hoisin sauce will last longer, I've had them in for two months. -- -Dan A. Dickey ihnp4!mmm!ciprico!dan
