[net.cooks] storing oyster sauce

	I had a opened but tightly closed bottle of oyster sauce in
my kitchen cabinet for about 2 weeks. I looked at it yesterday and
it was getting a case of the white fuzzies. Should oyster sauce be
refrigerated to stop the growth of mold or did I have a bad bottle 
of oyster sauce? It was such a pity to throw the whole bottle away.
I just LOVE oyster sauce!

    Oyster sauce should be refrigerated once opened and you 
wipe off the excess around the bottleneck after every use.

	Yes, refrigerate oyster sauce. My mom does (so do I).

	Have you noticed a wide variance on the price/quality of oyster
sauce ? Cheap oyster sauce tends to be very salty.

	As much as I like oyster sauce, it is easy to overdo it. Everything
tastes the same after a while.

I've had success storing oyster sauce in the fridge for over a month...
I usually use up a bottle within a month though, so can't really say how much
longer it might last.  Hoisin sauce will last longer, I've had them in for
two months.
