How do you tell when a kiwi is ripe??

If it isn't ripe when you buy it, do you ripen the
kiwi in the fridge or on the counter??  Also, are
there any tricks to peeling one??

Fortunately they seem to have a rather wide range of useability.
I just leave them out in ye ole repening bowl, and they slowly
get softer and more pungent.  If you leave them out long enough
(say over a week) they may begin to ferment.

Use a paring knife.

This may be a late response, but I've been told that you can
ripen the fruit on a counter top. Does that help?
Also, if it is somewhat soft when you squeeze it, it
is usually ripe.

As for peeling, a vegetable peeler is about as good as anything...
