[net.cooks] Wanted: Receipe for Green Tomato Relish

sjf@cord.UUCP (SJ Foster) (08/19/85)

I have looked everywhere for a receipe, but have not
been able to find one. When I was a kid, a neighbor would
make green tomato relish every fall and it was great!
Anyone know how to make it?

Green Tomato Relish
from All About Tomatoes by Ortho Books

2 cups (4 to 5 medium) ground green tomatoes
2 cups (2 medium) peeled and ground cucumbers
2 cups (4 medium) ground onions
3 medium-size tart apples, peeled and ground
1 green pepper, seeded and ground
2 small, sweet red peppers, seeded and ground
4 cups water
1 1/2 tablespoons salt
2 cups white sugar
2 cups cider vinegar
1 tablespoon mustard seed
6 tablespoons all-purpose flour
1 tablespoon dry mustard
1/4 teaspoon turmeric

1. Mix tomatoes, cucumbers, onions, apples, peppers, water, and salt in
a large kettle. Let stand for 24 hours; drain off liquid.

2. Add sugar, 1 1/2 cups of the vinegar, and mustard seed. Bring to a slow
boil and cook for 30 minutes, stirring occasionally.

3. Make a paste of flour, dry mustard, turmeric, and remaining 1/2 cup vinegar.
   Stir into boiling mixture.

4. Simmer for additional 30 minutes or until mixture has thickened, stirring
   occasionally.

5. Fill sterilized jars and seal. Process in boiling water bath for 10
   minutes.

Makes 4 pints.
