Key Lime Pie 3 egg yolks 1 cup sugar (divided) 1 pkg. (3 ounces) lime-flavor gelatin Juice of 2 limes 3 drops of green food coloring 1 cup heavy cream Baked 9" pie shell 4 egg whites l/4 tsp. cream of tartar In top of double boiler, mix egg yolks, 1/2 cup sugar, gelatin, lime juice, and food coloring. Stir in l cup warm water and put over simmering water. Cook, stirring, until very slightly thickened. Set top part of double boiler in bowl of ice and water and stir until thickened. Whip cream until stiff and foold into mixture. Pour into pie shell and chill l l/2 hours or until set. Beat egg whites until frothy, then add cream of tartar and beat until ALMOST stiff. Pile lightly on pie, spreading to cover filling. Bake in preheated 425 degree oven for 5 minutes or until golden brown. Chill 2 to 3 hours before serving. ENJOY!

I'm sorry, Holly, this AIN'T Key Lime Pie! It looks like a lovely lime pie, but as any conch'll tell you, Key Lime Pie needs the juice of Key Limes (grown in the Florida Keys), and a true Key Lime Pie is YELLOW, not green (as Key Lime juice is yellow, not green). I had a recipe for Key Lime Pie once, off a bottle of Key Lime juice purchased on Key West. This pie had no gelatin in it, nor any food coloring. Unfortunately, I no longer have the juice nor the bottle, so I cannot post a *real* Key Lime Pie recipe. All I remember is that it looked like a lemon meringue pie and tasted *heavenly*.
