Celery Root Salad Peel two pounds of celery root and cut it into 1/2 inch cubes. Boil it in salted water, uncovered, until tender (about 15 minutes). Dressing: 6 Tbsp olive oil 3 Tbsp white wine vinegar 1 tsp salt 2 tsp sugar 1 1/4 tsp dry mustard 1/2 tsp pepper 1 clove garlic, mashed 3/4 tsp dill weed 1/3 cup minced green onion 1/3 cup minced parsley Combine cubes with dressing and refrigerate at least 2 hours. -- Jeff Lichtman at rtech (Relational Technology, Inc.)
