Here are two of my favorite recipes for chicken.
CHICKEN DIVAN
2 10 oz. pkg. frozen brocolli spears
1/4 c. butter
6 T. flour
2 c. chicken broth
1/2 c. whipping cream
3 T. dry white wine
3 chicken breasts (cooked)
1/4 c. parmesian cheese
Bake chicken for 45 minutes at 350 degrees. Cook brocolli
and drain. Melt butter and add flour, salt, and pepper.
Add chicken broth. Turn off heat and stir in cream & wine.
Pour half of sauce on brocolli. Add cheese to remaining
sauce. Add chicken and pour sauce over. Sprinkle parmesian
cheese on top. Bake for 20 minutes at 350.
HAWAIIN CHICKEN
Line a 12 x 9 pan with foil. Sprinkle 1 cup uncooked
rice in the bottom of the pan. Do not use instant rice
but the long grain type. Warm 1 can cream of mushroom
soup, 1 can cream of celery soup, and 2 cans milk.
Use 2/3 and pour on rice gently. Put chicken breasts
and thighs on top and a layer of sliced American cheese
on top of that. Pour the rest of the soup on top and
sprinkle with a pkg. of dry onion soup. Bake at 350
for 2 hours covered and at 400 uncovered for half an
hour more.

They look like nice recipes, but why the frozen brocolli? Do you have something against fresh? Does it work better? Or do you think it is cheaper? - Steve Gutfreund

You can use whatever type of brocolli you prefer. I only
wrote frozen because I am used to cooking frozen brocolli
as opposed to fresh.

Help!! I didn't real the Unix manual correctly and did
a 'cat a b > a' and lost most the the chicken recipes
I've been collecting...including one for chicken adobo,
a Gilroy Garlic contest recipe, a middle eastern (persian)
one, italian style cutlets, a mexican style recipe, and
probably more I can't remember. If anyone else has a
collection of chicken recipes please mail them to me.

References: A CHICKEN RECIPE: marinate chicken pieces in soy sauce, rice wine (or whatever), ginger pieces, crushed garlic, scallion slices, garlic powder, onion powder. heat oil in skillet. Brown the chicken pieces in oil. (and broccoli or cauliflower pieces if you like). lower to simmer or low and add marinade. Cover and cook until chicken is tender and done.
