A friend of mine is looking for a good white-wine spaghetti sauce. I don't know any, but would like to, so I am asking the most diverse reference work known to me :-) the net. Can you help? Try the "spaghetti (or is it fettucine?) with clam sauce" from the first "Classic Italian Cooking" by Marcella Hazan. It uses white wine, clams, butter, and Parmesan cheese and is flavored with hot red pepper. It's a refreshing change from the usual bland white-sauce based clam sauces. A further plus is that it is easy and quick.
