Someone asked for carrot cake recipes, so I went wild:
#1: carrot cake

   O R A N G E    C A R R O T    C A K E

3 c	flour
2.5tea	soda
1 tea	salt
3 tea	cinnamon
------------------  mix in a small bowl

2 c	sugar
1.25 c	oil
3	eggs
2 tea	vanilla
1 c	coconut
2 c	shredded carrots  (~4 med.)
2 tea	grated orange peel
11-oz can of mandarin orange segments, NOT drained

----------------- Mix all above, beat on *HIGH* for 2 minutes
	pour into greased 13x9 pan.  Bake at 350 until done
	(about 45-55 minutes, or till toothpick poked in center
	comes out clean.)

	cool.

---------------------- frosting follows:  --------
3 c	powdered sugar
8 oz	cream cheese
2 TABL	butter
1 tea	vanilla
	nuts if desired

I've made this and it's *VERY* good!   The batter is a bit
runny so you should probably drain off 30-50% of fluid in the
canned oranges. 

The cake comes out high, so about 120 to 140% pan surface area
should make a cake you can attempt to bite (I have a BIG mounth).  
If you use 2 13x9's you should get "brownie thickness" cake, but 
the baking time is touchier.

The frosting will be thick if you use it all, so 66% of above 
quantities will probably be enough.

About half of these are scratch cakes, the others list a box
of cake mix as an ingredient.  (The mods, frosting and fillings
will always convince your friends that they were ALL scratch cakes,
though.)

As a bonus for reading all this drivel:

1 favorite Chocolate cake recipie or boxed mix.
1 21oz can of cheery pie filling (reserve .5 c)
1 extra egg.

Increase number of eggs used by one.  (ie: if is says 2 then use 3)

replace *ALL* other liquid with the pie filling.

Other than these modification, follow recipe.

Batter will be thick (kinda like brownies)

Frost sides, between layers, and one inch in on top with white
or other frosting.  Put remaining cherries in the center.

	I got this recipie from Jenny Weber who's the best (not 
	counting mom) cook I know.  Most of her recipies read like:

	Brownies: mix up dough. use extra chocolate (4 sq's)
		  cook until done.
