Here's a favorite of mine that has a delicious pie crust and rich chocolate.

		------  Chocolate Parfait Pie ------

Step 1 :  Make the crust.

	  Combine 1/2 cup butter (margarine OK) with 2 tablespoons sugar.
	  Do not cream.

	  Add 1 cup all purpose flour.  Mix just until a dough will form.
	  Remove 1/3 to 1/4 cup to make crumbs to sprinkle on top of pie.

	  Press remaining mixture evenly over bottom and sides of a 9 inch
	  pie pan with well-floured fingers.

	  Break up the 1/3 cup removed earlier into small to medium sized
	  `crumbs`.  Bake at 375 until light golden brown -- crumbs 10-12
	  minutes, crust 12-15 minutes.


Step 2 :  Chocolate pie filling

	  Melt 1 cup (6 oz.) semi-sweet chocolate in 1/4 cup water and
	  1/4 cup light corn syrup over low heat.  Mix well and let
	  cool.

	  Combine in small mixing bowl :  1/2 cup sugar,  1/4 cup water,
	  1 unbeaten egg white,  1 teaspoon vanilla,  1 teaspoon lemon
	  juice.  Beat with mixer at high speed until soft peaks form.

	  Beat 1 cup whipping cream until thick.  Fold cream and half
	  of chocolate mixture carefully into the egg white mixture.
	  Carefull here - too much agitation will cause the mixture
	  to lose it's `body` and become a thick puddle of goo.

	  Spoon half of filling into crust.  Drizzle half of remaining
	  chocolate over filling.  Repeat with remaining filling and
	  chocolate.  Stir gently with butter knife to create ripples.
	  Sprinkle crumbs over top.


Step 3 :  Freeze 4-6 hours and eat!
