This receipe, I make for 2 people with some leftovers: 2 boneless, skinnless chicken breasts cubed and uncooked 1/2 - 3/4 pound fresh broccoli cut up 1/4 fresh (or canned) sliced mushrooms 1/2 can sliced water chestnuts (optional) 1 can creamed soup ( I recommend the new Campbell's cream soups) 1 small onion diced 4-6 oz of your favorite cheese shredded 3-4 whole wheat flour tortilla's spices, like garlic, salt, pepper, basil 1 tbls cooking sherry 2 tbls oil In a pan on med to med high heat saute the cubed chicken, diced onions and sliced mushrooms in the oil and cooking sherry. Add spices to taste. Saute just until chicken is white on the outside. Add broccoli, water chestnuts and the can of creamed soup. Simmer for about 10 minutes. If the mixture seems a little dry you can add about 1/4 cup milk. Line the bottom and sides of a small glass pan, (Mine is about 6" x 10") with 2 of the tortilla's. Fill pan with chicken mixture. Put the other 1 to 2 tortilla's on the top of the chicken mixture and put the shredded cheese on the top of the tortilla's. Bake in 350 oven until cheese is bubbling, approx 15-20 minutes. - Robin Humphrey (hao!asgb!rch)
