I offer the "Mississippi Mud Cake" recipe; it's not especially light summertime fare, but it is good! Materials 1 3/4 C strong coffee 1/4 C bourbon 5 oz baking chocolate {Pretty good so far} 1 C sweet butter 2 C sugar 1 t baking soda 1/8 t salt (is this really necessary?) 2 C flour 3 eggs, slightly beaten 1 t vanilla cocoa Method Butter a tube (angel food cake) pan and dust with cocoa. Heat coffee and melt butter and chocolate in it. Cool and add bourbon and sugar; stir to dissolve. Add sifted dry ingredients in four portions, beating at low speed. Add eggs and vanilla. Pour into prepared pan and bake in preheated oven at 275 F (yes) for 90 (yes) minutes or until it tests done. Cool in the pan. Serve with a dollop of whipped cream.

Pour into prepared pan and bake in preheated oven at 275 degrees F for 90 minutes or unitl it tests done. Cool in the pan. Serve plain or with a dollop of whipped cream.

*** REPLACE THIS LINE WITH YOUR RECIPE *** This is to die for! Mississippi Mud Cake: 2 sticks soft margarine 2 C. sugar 1 1/2 C. flour 4 eggs 2 T. cocoa 1 t. vanilla 1 1/2 C. chopped nuts 1 1/2 C. coconut 1 jar marshmallow cream Cream sugar, cocoa, and margarine. Add eggs and vanilla. Mix well. Fold in flour, coconut, and nuts. Bake in 9x13 greased pan @ 350 for 35 mins. Spread a jar of marshmallow cream on HOT cake. Cool completely before icing. Ice. refrigerate until ready to serve. Icing: 1 lb. (16 oz. box) powdered sugar 1 stick margarine 1/2 C. evaporated milk 1/3 C. cocoa 1 t. vanilla Add all ingredients, mix well.
