Here is a simple recipe for homemade turtle candy.

I've tried these for 3 different batches and they always are easy
to make. Using the loose interpretation of quantities:

Supplies

1 or more pounds of whole pecans
Approx 1/2 pound of generic caramels
Approximately 3/4 pounds of bulk unsweetened chocolate
Approximately 2 ounces of summer (white) chocolate

Process
1.- Remove the paper wrappers from the caramels and place them into
    the upper half of a double boiler and melt them over boiling
    water. Don't over heat. The caramel should flow but not boil.

2.- Make a layer of pecans approximately 1/4 inch deep on wax
    paper.

3.- Spoon the melted caramel onto discrete patches of pecans.
    The patches should wind up around an inch in diameter. Allow
    the caramel to cool and harden. Lift the coated pieces off the
    layered pecans and place them on another piece of wax paper.

4.- Melt the chocolate and the white chocolate together over
    water in a double boiler. The white chocolate will raise the
    melting temperature of the mixture keeping it off fingers
    when enjoying these goodies.

4.- Spoon the melted chocolate over the caramel covered pecans
    and allow to cool. Place them into paper petit-four cups and
    store in an air tight container.
