A few weeks ago I posted an article saying that I heard a nutrition expert lecture that disaccharides (sucrose) were more unhealthy than monosaccharides (e.g., fructose) or polysaccharides (starches). I said I would look up his reason in my notes and finally found those notes. He said that according to recent data, disaccharides promote the synthesis of triglycerides, which are a factor in cardiovascular disease. Mono- and polysaccharides do not have this effect. I'm sorry that's all I have on it--it was not a formal, scholarly lecture but a nutritional overview for a nontechnical audience. I don't have any references; I don't know if the statement is based on his own research or that of others. -- Pat Valdata pyuxh!nosmo
