Thought I'd share a holiday favorite with the group. Corn Casserole Ingredients 2 cans corn (can be 1 regular and 1 creamed, but not necessary) 4 ounces Shredded Swiss Cheese A little (about 1 tablespoon) minced onion 1 egg 3 ounces evaporated milk breadcrumbs (Either put aside a little of the swiss cheese or shred a little extra for later) Mix all the ingredients together. Pour into a buttered casserole dish. Top with the extra shredded swiss cheese and breadcrumbs. Dot with butter. Bake at 350 for about 25-30 minutes or until bubbly and lightly brown. ------ Note: To increase the recipe, double the ingredients except the 1 egg. This casserole can be made ahead of time, then reheated.
