[net.cooks] Simple X'mas Cookies

This recipe is from the 1984 November issue of the German fashion magazine
"burda moden". (yes in lower case!)  Each issue contains 70 - 80 patterns
for clothes, and 20 - 30 recipes.  The theme for that issue's cookery
section is X'mas cookies, most of which are macaroons -- so's this one.

Mixed Nut Snowballs

10 oz. mixed nuts, finely chopped   (e.g. walnuts, cashews, pine kernels)
rind of 1 lemon
1 heaped tbsp. cornflour
1 tsp. cinnammon
pinch of salt

4 egg whites
7 oz. sugar
juice of 1 lemon

Reserve 3 tbsp. nuts for garnish.  Combine remaining nuts, lemon peel,
cornflour, cinnammon and salt.  Beat egg whites till stiff, beat in
sugar. Mix in lemon juice.  Fold the nut mixture into the whites.
Place spoonfuls of the mixture on to a cookie sheet lined with waxed
paper.  Sprinkle the reserved nuts on top.  
Bake 300 deg F for 20 - 25 minutes.  Makes about 60 cookies.  
Flavor develops if kept in air tight container.

I tried this recipe last X'mas and found that 1) there's too much cinammon
for my taste 2) you've got to watch carefully so they don't brown, otherwise
you'll get "mudballs" instead of "snowballs".  Maybe a slower oven would help.
