***** My favorite is very simple; I'll give you the single version, I'd triple or quadruple it for nine guys. NON-TEXAN CHILI 1 # hamburger 1 onion, chopped 1 large green pepper, chopped 1 fat can tomatoes (32 oz. approx) 1 16-oz can pinto beans 1 16-oz can kidney beans Garlic: a clove or two chopped, or powder Cumin: maybe a teaspoon (not essential but good) Chili powder: to taste, I don't use much at all Salt, to taste Cook onions, pepper, hamburger together over low heat, stirring constantly, till onions are translucent. (Even better, for really tender flavorful meat, is to cook the hamburger in advance in a _covered_ Crockpot on low for all day, then cook the veggies in a little oil. Then stir in cooked meat.) Add everything else, breaking up the tomatoes a little. Simmer for twenty minutes or so. Very delicious! You could add chopped celery, another can tomatoes, etc.

YES! Chicken soup is great! Other vegetables yu might want to add are: kale (get that calcium) cabbage fresh garlic (who says you don't want an overpowering garlic flavor? :-) and spices: sage thyme black pepper anything you might eat with chicken I, personally, keep the salt to a MINIMUM. As the original recipe pointed out, those who like salt can add it, and I think it covers up the chicken flavor.

I forgot to include dill (yes, dill) without which I wouldn't make chicken soup. Marsha
