[net.cooks] Cognac Sugarplums

     A terrific, very rich, no-bake cookie.
     From the "Silver Palate Good Times Cookbook".
	
6 oz semi-sweet chocolate chips
2 + 1/2 cups finely crushed vanilla wafers (a box less some nibbles)
1 cup of finely chopped pecans (8 - 10 oz whole)
1/2 cup granulated sugar  (plus extra to roll cookies in)
1/4 cup light corn syrup
1/3 cup cognac
	 
1. Melt chocolate bits in a double boiler atop simmering water
2. Crush vanilla wafers (very fine - that's important)
3. Chop pecans (again fineness is everything)
4. Add sugar, corn syrup and cognac (i use 1 nip of cognac +
                        1/2 nip of rum - works fine;costs less)
5. Stir in pecans and wafer crumbs
6. By now the mixture should be a smooth paste.  Remove from heat
   And form into one-inch balls.  Roll balls in granulated sugar.
7. Store these in an air-tight container; if you are a chocoholic 
   have someone hide them from you.  They are best if you allow 
   them to age and mellow.
