My favorite appetizer (and snack) recipe is a microwave candied pecans recipe; EXTREMELY simple to make and absolutely delicious! Try to use fresh pecans; fresh vs. frozen orange juice doesn't seem to make a difference. I've thought about adding grated orange peel but haven't gotten around to trying that. ORANGE-CANDIED PECANS 2 cups pecans (halves are prettier) 1 cup sugar 1/4 cup orange juice Mix all of these in a large glass (or other microwave-proof) bowl. (You need room for boilup in this bowl.) Microwave on MEDIUM HIGH for six minutes, then stir to coat well. Again microwave on MEDIUM HIGH for ? minutes - stick around and keep an eye on this, somewhere between 5 and 20 minutes. (Be warned; someone had a smokeout from doing this and NOT keeping an eye on it.) You'll smell it cooking, an orange&pecan odor, before it's done. The mixture is done when it just *begins* to have a dark- brown almost-burned spot. It's necessary to almost burn it to get a really good flavor. Note: I've also made this in my Mom's tiny one-speed microwave; worked fine, cooked faster. Keep a close eye on it. When it's done, take it out (use mitts) and stir quickly; then dump it onto a large buttered cookie sheet and spread it; separate the individual pecans quickly. You have a minute or two, then it's hardening. When cool, break up the still-sticking-together clumps and try it; you'll love it! I've noticed that people who don't like sweets all that much love this one. It's not all that sweet, I guess. Let me know if the addition of orange peel is a good idea -- ie, you tried it and it worked ... Enjoy! (DO try this one.)
