[net.cooks] Cook Book for Indian Recipe

dss00@amdahl.UUCP (dss00) (01/30/86)

The mother of a friend of mine has published a series of mini books
on Indian Cuisine. It is called "Rukmini's Mini Cook Books".

Each publication in the series is about $1.00 plus postage (approx $0.50).
There are about 20 mini-cookbooks in the series.
Each booklet is self contained and designed specifically for folks
living in the U.S. and Canada. Substitutes for Indian condiments,
grains etc. which are found in American Grocery Stores are given
where ever possible.

This series is very different from conventional books on Indian cuisine.
It tells you things like what you can freeze and what you can not;
how to cope with disasters in the kitchen when trying a new recipe etc..

You donot have to buy the whole series, just the titles of interest to
you. I do not know about all the titles, but some I have seen are:

- Fresh and Frozen Madras Sambar & Rasam
- Rice for all Occasions
- Vegetable Side Dishes (part I thru part III)
- Fresh and frozen Indian Breads
- Some Sauces from North and South India
- Chutneys Raitas & Bhurtas
- Payasams (Kheer) and Desserts
- Old and new drinks for Indians
- Snacks: Sev, Bhajiya, Vada, Fried Dal, Baked Samosa, Alu Chat etc.
- Authentic Meat Dishes
- Egg and Chicken Dishes
- Some South Indian Sweets
- Some North Indian Sweets
- Pickles You can Make
- Basic Recipes for Ghee, Dhahi, Masalas etc.

The author is an elderly lady who has lived as a student in the U.S.,
then as a house wife in India for over 22 years before immigrating back
to the U.S. in early 1970's.

Where the mind is without fear; And the head is held high
Where knowledge is free;
Where the world has not been divided into narrow domestic walls;
Where the clear stream of reason has not lost its way,
in the dreary desert sand of dead habits;
Into that Kingdom of Heaven my Father, let my country awake.
