I am not Jewish, but I am vegetarian. In response to your request I would make the following suggestion: Have you thought about using pre-prepared meat substitutes? There are are many out on the market today in all the health food stores. While I would not use it for myself now, when I first became vegetarian and had non-vegetarian friends over to the house, I would use these to create dishes that would appeal to the guests, but would still be kosher for me. In particular for your second request re: the tsimmis I would look into this one. For the chicken soup, a nice vegetable brothy type soup would be nice. You might like to add some soybeans for texture. This can be made to taste just like chicken soup, as it is the spices and not the chicken which makes it taste the way it does. If you are fond (?) of the chicken fat in the soup, just add a little vegetable oil. Experiment with your seasonings on this one before you make a large batch for your guests. My suggestion would be to use commercial poultry seasoning for starters, and turmeric is always good (in moderation). Good luck, and happy Passover! Jan Benton
