Here is a recipe for my favorite kind of cake, the Sachertorte. This is a dish strictly for chocolate lovers. It is rich but not sweet. The CAKE 6 oz. semisweet chocolate 6oz (1 1/2 sticks) butter 1/3 cup sugar 6 large eggs, seperated 3/4 cup flour pinch of salt 3 tbls apricot jam (strawberry is also good, but apricot is traditional) Preheat the oven to 350 degrees. Flour an 8 inch round cake pan at least 2 inches high. Melt chocolate over low heat, stir until smooth, set aside to cool. In a large bowl, cream the butter. Beat in the sugar. Add the egg yolks and beat well. On low speed, beat in the chocolate, then add the flour and beat only until the flour is mixed in. Add the salt to the egg whites, and beat with clean beaters until soft peaks form. Stir two large spoonsful of the whites into the chocolate mixture to lighten it. Then fold in the remaining whites in 4 or 5 additions, and fold only until no more whites show. Turn the mixture into the pan, then rotate the pan briskly in both directions to level the top. Bake for 45 to 50 minutes until a toohpick inserted in the centre comes out clean. Let the cake rest for 10 minutes, then invert onto a rack. Put it right side up on a plate, and split it into two layers. Spread the jam on top of the bottom layer and replace the top layer. (Incidently, jam is very nice between the layers of any chocolate cake.) GLAZE 8 oz semisweet chocolate (chopped coarsely, or you may use chips) 1/4 cup light corn syrup (or use a strong sugar syrup) 3 tbls water 2 tbls butter Heat syrup, water, and butter util they boil. Remove pan from heat, add chocolate, and stir briskly until chocolate melts. Pour glaze onto cake, smooth glaze, and refrigerate until ready to serve the torte.
