Honey Oatmeal Cookies 3/4 cup (175 ml) honey 1/2 cup (125 ml) soft shortening 1 large egg 1 1/2 cups (375 ml) all-purpose flour 1/2 teaspoon (2 ml) baking soda 1/2 teaspoon (2 ml) salt 1 2/3 cups (400 ml) rolled oats 4 tablespoons (60 ml) sour milk or buttermilk 1 cup (250 ml) raisins 1/2 cup (125 ml) chocolate chips 1/2 cup (125 ml) chopped walnuts In large bowl, cream together honey and shortening. Beat in egg until smooth. Sift together flour, baking soda and salt. Mix with oats. Add dry ingredients alternately with sour milk to creamed mixture. Mix well and stir in raisins, chocolate chips and walnuts. Drop by spoonfuls onto ungreased cookie sheet. Bake at 375 deg. F. (190 deg. C.) for 12 to 15 minutes. Makes 2 dozen big cookies. p.s. If you don't have any sour milk or buttermilk simply add 1/4 teaspoon vinegar (1 ml) to normal white milk. -- Violet R.
