I am looking for a program which scans text and converts it in an editable
form (as Thunderscan does it for images).

If you already have ThunderScan, then all you have to do is buy Read-It!! from
Olduvai Software and it will convert scanned text images into text-editable
docouments that can be manipulated with any word processor or text editor.
You can order from MacConnection for $79.00 I think. Hope this helps....
