There is an editor called JOVE (Jonathan's Own Version of Emacs) that is available for the mac; it's actually a pretty nice implementation, which makes use of menus if you want them, but can be completely command driven. If you need things like lisp, this is not the emacs for you; it's a stripped down version. Last I knew, it was available anonymous ftp from cs.rochester.edu.
