Dave is currently working on a new version of the Spectre 128, the Spectre GCR. This new version will include additional hardware to handle reading, writing and formatting Mac disks. Disk I/O should be about the same speed as a real Mac. Dave is hoping to release the Spectre GCR sometime in the spring of '89. Currently you can use the Spectre 128 with the Translator One (from Data Pacific). This is slow but does allow you to directly read and write Mac disks. I would recommend that you use Spectre format (ie. ST readable) disks as much as possible. They are much faster than Mac disks with the Translator One.
