Can I hook a Moniterm Viking monitor up to the A2320 display enhancer board or does the monitor only run off a Moniterm board.

The Moniterm monitor may only be connected to its board, which
plugs into an Amiga 2000 or 3000's video slot.
(The Moniterm board does de-interlace ...x400 modes.)
