Well, I've received a number of replies to my question of what the pipe organ music in Rollerball was. I'd like to thank everbody who replied, even the few who chastised me for not knowing the answer. All I can say is, I'm sorry, but I've never been heavily into classical music. Anyway, the music is "Toccata and Fugue in D Minor" by J.S. Bach. A number of people figured this, even though they evidently hadn't seen Rollerball, just from my (rather poor) description, and that this piece of music seems to be used quite often in television and movies. Do not be mislead by the fact that its the soundtrack to a strange movie. The "Executive Party" pieces have an upbeat jazzy style which adds a nice variety to the album.
