Leigh Calnek asked about programs allowing you to access disks on a byte level in order to recover most of a file that was partially written over. There are many byte editors available. Most copy programs, such as Copy II+, have byte editors included. Beneath Apple Dos is the classic reference for low level interaction with Dos 3.3, including file recovery. Beneath Apple Prodos is the corresponding reference for Prodos. There is a byte editor I wrote, called Dr. Disk, in vol. 1, No. 2 of Compute!'s Apple Applications Special as well as Compute!'s Third Book of Apple. The article describes how to recover a file, but I don't think it's comprehensive enough to describe how to recover part of it once it has been written over.
