Why do FM radio's get better and then worse reception as you walk
around in the room where they are located?

Basically because FM is normally transmitted at VHF (~ 100 Mhz).
So, your body is a significant fraction of the wavelength (~ 3 meters).
Moving a conducting body around in a room, where you already have a
compilcated standing wave pattern (due to reflections of the radio signal
from walls etc) will disturb the standing wave patterns - hnce the signal
received by your radio.
