This is a recipe for a version of creamed spinach that we found
that uses sour cream instead of milk. We have tried it
and it is quite good.
.IH "Serves 6"
.IG "20 oz" "spinach," "600 g"
chopped. This can either be fresh spinach or frozen chopped
spinach.
.IG "\(12\-1 cup" "sour cream" "1\-2 dl"
.IG "1\-2 Tbsp" "prepared horseradish" "15\-30 ml"

Clean, trim, and chop spinach, and cook in a dry, covered
saucepan over a medium heat until the spinach is wilted.
If you are using frozen spinach, cook to thaw and evaporate all
water, then proceed.

Stir in sour cream and horseradish.

Serve hot.
