It turned out to be so good that I used up the rest of the bottle in repeat performances. .IH "Serves 4" .IG "4" "eggs," (large) .IG "2 Tbsp" "butter" "30 g" .IG "\(12 lb" "fresh mushrooms," "200 g" (sliced) .IG "2 Tbsp" "flour" "15 g" .IG "\(12 cup" "white cooking wine" "12 cl" .IG "\(12 cup" "chicken broth" "12 cl" .IG "3 Tbsp" "mayonnaise" "50 g" .IG "1" "small onion," (chopped) .IG "\(12 Tbsp" "dried parsley" "10 ml" .IG "" "salt and pepper" (to taste) .IG "2 Tbsp" "butter," "30 g" (melted) .IG "\(34 cup" "Monterey Jack cheese," "100 g" grated. .PH .SK 1 Saut\z\(aae mushrooms in .AB "2 Tbsp" "30 g" butter. Stir in flour. Blend well. Add wine, broth, mayonnaise, onion, parsley, salt and pepper. Cook, stirring until sauce is smooth. .SK 2 Pour sauce in shallow baking dish. Break eggs over sauce, taking care not to break the yolk (it makes serving easier if the eggs are distributed symmetrically in the dish.) Pour .AB "2 Tbsp" "30 g" melted butter over eggs. Sprinkle with cheese.
