How hard (expensive?) would it be to take an old 128K Mac logic board and
convert it into a smart RS-422 AppleTalk device controller?

The point is this, with AppleTalk you loose your printer port... it would
be sure nice if you could access a shared imagewriter on the network.  With
an old 128K logic board, you have the ports, SCC, 68000, and memory... just
add a power supply and replace a couple of RAM chips with ROM to bootstrap
the "smart" AppleTalk node, and walla.

Is anyone doing this, or am I overlooking an important point?
