The fact that a nick in the knife is grounds for the shochet to lose his job because a nick might slow the death is one part. It has been shown that severing the jugular causes the animal to become insensitive almost instantaneously is certainly far more humane than most other forms of slaughter. I don't want to get into a big discussion about hunting, but compare trying to shoot a deer from 100 feet with a high powered rifle and not doing the job completely on the first shot. I believe it was a humanist philosopher who said it is no wonder that the Jews are such a peaceful people.
