Justifying vegetarianism is complicated for some people. Health justifications can be easily argued one way or another; it seems that most health arguments are like religion (i.e., faith is most important). The political argument is viable, but if carried all the way, requires a life of monkish puritanism. My own philosophy is based upon a distaste for anthropocentrism. I don't like killing animals; I especially dislike the idea of paying someone else to do it. Given the choice between starving and killing a wild boar, I would try for the boar (probably lose, too--those suckers are MEAN.) But the best reason is simply: Because I goddamn well don't want to, and that should suffice.
