[net.veg] The name is...?

I think this product called whaet meat may be the same as that
decsribed in The Farm Vegetarian Cookbook as 'gluten'.
It is wheat dough needed so that all of the starch is removed, and
all that is left is the stringy stuff that hold the flakes together,
that is, the gluten.
Can anyone else comment?
