I have to agree with Larry Tepper that gluten is disappointing, when attempted by amateurs. As well, it is a process that I feel takes up far too much time and uses far too much water -- for rinsing-- for it to be really a feasible practice. But, if you want to pay for it in a restaurant or whole food store, be my guest. Tofu is a little better in this regard. you can make it at home -- but unless you have a lonely sunday afternoon with no bowl games on, and are willing to spend a while on it, it is not worth the effort.
