For all those vegetarians out there who feel tormented that they can no longer enjoy the pleasure of eel for dinner, worry no longer. While reading through some cookbooks in a bookstore the other day, I came across this gem of a recipe for MOCK EEL (UNAGI TOFU). 1 pc. tofu 2 cm. (3/4") piece fresh ginger root 1/2 t. salt 1/2 C. whole wheat pastry flour 1 T. soy sauce 1 sheet nori (seaweed) 8 wooden skewers 1) Mash tofu & drain in cloth bag 2) Add flour & salt 3) Cat 1,2 4) Split nori into four files & place on flat surface 5) Overlay ea. pc. nori with 175 mm. (~1/2") tofu mix 6) Heat oil to 350 degrees F. 7) Deep fry tofu with nori side down 8) Remove after few minutes but while tofu is still light in colour 9) Peel & grate ginger, then extract juice 10) Cat 1 t. ginger juice with soy sauce 11)Peirce ea. pc. "eel" with 2 skewers 12) Cat 10,11 Serve immediately, & Enjoy |-) |-) ~e w 1
