Here is a recipe for vegetarian chili. It's *very* good!
Be sure to start the beans soaking the night before.
1 cup dried pinto beans or kidney beans
3.75 cups water
2 bay leaves
2 tablespoons corn oil
2 chopped medium onions
4 peeled and crushed cloves of garlic
2 seeded and chopped green peppers
2 chopped stalks of celery
2 tablespoons of butter
1 tablespoon ground cumin (don't forget this!)
.5 teaspoon ground coriander
.25 teaspoon cayyenne pepper
1 teaspoon oregano
.5 teaspoon dried basil
.5 teaspoon dried dillweed
.5 teaspoon ground pepper
2.5 cups skinned & crushed tomatoes
2 teaspoons salt
2 teaspoons red wine vinegar
about 1 tablespoon chopped & crushed chili pepper (a whole pepper if you're
brave or have tired taste buds)
Soak the beans overnight with 3 cups of water. They should expand to
2 or 3 times their original volume.
Drain the beans (discard the water they soaked in) and put them in a big
enough pot with the (fresh) water and bay leaves. Cover and simmer for about
1.5 hours. By then, the beans should be soft.
In large saucepan, heat oil, add onions and garlic and cook for about 2
minutes. Add green pepper and celery and cook about 5 more minutes.
Add butter, cumin, coriander, cayenne, oregano, basil, dillweed, and
black pepper. Cook about 3 minutes, stirring often. Add tomatoes
& salt. Simmer 10 minutes. Add beans, the liquid the beans cooked
in, and vinegar. Simmer 30 minutes.
Serve with cornbread or rice.
I prefer rice--the beans with rice make a complete protein.
The amounts of anything don't have to be exact. I tend to be extra
liberal with the spices, expecially the cumin. I tried a whole chili
pepper (it was very small) and had to eat a lot of rice with the last
batch I made. For the tomatoes, I used canned ones. Who says
vegetarians don't eat well?!
