Mushrooms!_____________________________________________________________________ Oh boy! Morel hunting season is about to begin. After that, of course, come all kinds of yummy fungi. I need recipes for these undomesticated mushrooms. Vegetarian recipes, of course. Anybody have some? I'll start off with a recipe I got with a package of freeze-dried chanterelles. (For those of you who aren't into mycology, chanterelles are a type of mushroom.) Chanterelles "Hungarian" Style ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 1 cup of fresh chanterelles (or rehydrate 3/4oz. of freeze-dried chanterelles) 1 cup cream (or yogurt or even sour cream) 2 T flour 4 poached eggs 1 tomato (optional) paprika pepper salt (optional) Cut the chanterelles into small pieces. Cook them over low heat until the water has almost completely evaporated. Add the cream and flour and heat slowly to a boil. Add the pepper (and salt, if you really must). Pour on a heated hollow plate (a regular plate will do). Place the poached eggs on top and powder with paprika. Decorate in the center with a small red tomato. Serve warm.
