Broth and Brewer's Yeast (Revisited)___________________________________________
[I sent this out a few days ago, then I sent a reply (which I entitled "Re:
Brewer's Yeast (revisited)"). I know the reply made it out to net.land, but
I don't think this original article did. If it did, my apologies to those who
have received it twice.]
Broth
~~~~~ After trying out a few recipes that called for vegetable bull-
ion or vegetable broth, I've been playing with vegetable bullion and vegetable
broth a bit. Really useful stuff!
Is it feasible to make bullion and/or broth mix at home? The stuff is
certainly handy to have around. Anybody have recipes?
Brewer's Yeast
~~~~~~~~~~~~~~ I noticed that the primary ingredient in many broths is good
old brewer's yeast, the subject of a previous article of mine. I also noticed
that it's used in some seasonings (like Veg-It).
I'm still looking for brewer's yeast recipes and suggestions. Let's
keep those cards and letters coming!
Here are a few things I've learned:
o I always throw some in when I'm making bread. You never know
it's there.
o It goes well with dishes that have ricotta cheese in them.
Just stir it right into the cheese (or cheese mixture).
o It goes good in brothy soups. I guessed this from the fact
that all the above-mentioned broths use it.
o The "Melty Nutritional Yeast ``Cheese''" described in _The_
_Farm_Vegetarian_Cookbook_ is made with brewer's yeast, and
it's very useful. I tend to use it in place of ricotta cheese
in dishes where the cheese is not crucial to the dish's flavor.
Does anybody have any more suggestions for using brewer's yeast?
