[For all you millet fanatics out there]

No, it's not a burger, but it keeps a week and is a good lunch box item.

		Spicy TofuMilletCornBread

Take your favorite cornbread recipe (even from Joy of... :-) and:

	1) Halve the amount of corn meal. Use 3/4 or so the amount of
	flour (whole wheat, of course) and use leftover (or fresh cooked)
	millet in their place.

	2) Liven up the batter with spices. Fer instance:
		A couple diced chilies, ground roasted cumin and black
		mustard seeds, some whole cumin seeds, too, cayenne pepper,
		garlic, turmeric, and sesame seeds (I am a sesame seed
		junkie).

	3) Cube a chunk (1/2-3/4 lb) of tofu and do whatever you want
	to it (saute with fresh ginger !!). Put it on the bottom
	of your pan then add the batter. The tofu will turn out chewy.

	4) Sprinkle some cheddar and sesame seeds on top, then bake.
