Here's a handy food item to have around the house in case of emergency: JOAN OF ARC HOT & SPICY KIDNEY BEANS (or something close to that). They come in cans (one of the few canned anything I use), and are very easy to use in many quickee ways. Also, they are really not extremely hot. Some ways I use them: TACO SALAD Heat some of Joan's beans, crumble some taco shells, or nachos or corn chips, etc. in with them, and garnish with some shredded lettuce, celery, and black olives -- you may also want to add some garlic and parsley (or other spices of your choice) to the beans when you heat them. TACO Try them inside a taco shell instead of crumbling it on top. Add the usual taco garnishes: salsa, lettuce, tomatoes, olives, etc. TOSTADOS Heat up your beans again (adding your spices). Also take a whole wheat tostado shell -- these are called various things in the store, but whatever they are called, they are flat and about 6 in. round and usually in the refrigerated, or frozen food section. Heat your shell according to directions, then add your beans, lettuce, onions, shredded cheese, olives, etc., and roll up (or eat it flat if you like to. ENJOY.......CAM
