[net.veg] microwave veggies

malik@galaxy.DEC (Karl Malik ZK01-1/F22 1-1440) (02/01/86)

I would enjoy seeing some ***VERY SIMPLE*** microwave
vegetarian recipes or tips.

So far, I have discovered that fresh veggies with cheese
on top (in a covered bowl) works every time. But, if I am being
health conscious, I'm not sure that all that greasy cheese is
good for me.

Please note that I am not a very good cook and that if
you post complicated recipes that frustrate me I will be forced
to eat a defenseless animal instead.

						Thanks, Karl

                     -< Microwave Nachos! >-

It takes a slight bit of preparation to be done properly.
Take some kidney beans or pinto beans or any of those kind of
beans and soak them overnight. Cook them. You now have a bunch of
cooked beans that keep well in the freezer.
Put some in an airtight container and bring it to work.
Buy some nacho chips and some Old El Paso picante sauce on the
way there. You're all set now.
Borrow a bowl and a dish from the cafeteria. In the bowl,
mix the picante sauce and the beans. Put the nacho chips on the
plate and put a spoonful of the the picante bean sauce on each.
Zap them in the microwave and you're all set!

You can top them with cheese from time to time. If you
top them with cheese, they're okay without beans. (I prefer lim-
iting my intake of cheese.) You can use beans from a can, but
they aren't generally soaked before they're cooked, and therefore
may make you flatulent.

                        -< Bean Spreads >-

If you want to get fancy (this is still not much trouble),
you can make bean spreads by cooking varieties of beans and mash-
ing them. Add some sauteed peppers & onions & garlic & stuff
along those lines, along with spices (celery seed is good) and
some sauce ("natural" ketchup, A-1 sauce, and tomato paste all
work well). Mix it all up. These spreads can be made in big
batches and frozen in little containers.
Bring a container to work with you and use it in sand-
wiches. Add all your favorites - onions, mustard, etc. - zap it
in the microwave, then add the lettuce and tomatoes. Voila!
