A friend of mine just read a 700 page book by some fellow called McGee. I don't remember the title, but it is an exhaustive (and probably exhausting) scientific investigation into food. One of the surprising 'facts' my friend related was that white bread is more nutricious than dark bread. Something in the husk inhibits the absorbtion of the nutrients. People on restricted diets are advised to avoid dark bread. Dark bread is better for fiber, white for nutrition. Even Wonder bread! Has anyone else read this book? Is the author respected in the field? - Karl p.s. The author does just say there is 'something in the husk'; he goes through all the elaborate chemistry. Quite over my head.
