[I've wondered why net.veg gets so little traffic. ] I'm always looking for new vegetarian cookbooks. The other day at a whole foods store I skimmed about 10 or 15, none of them at all interesting to me. Almost all vegetarian cookbooks I've ever seen are either too whole-foodsy (I prefer to avoid tofu, tempeh, etc) or too dependent on cheese, cream, and casseroles. While the Moosewood Cookbook is about as good as they come, the emphasis is still on cheese and casseroles. I really like Indian, Mexican food and, in general, spicy food. What I would like to ask is am I alone? Does every other vegetarian in the world like casseroles, vegetables with cheese on them, cream soups, etc? My ideal cookbook would contain : lots of legume recipes (eg Indian: lentils, split-peas, kidney beans, chickpeas & mung beans, Mexican refried beans, and southern legumes: black-eyed peas, red beans and rice, lady peas, and crowder peas (all cooked without the ham hock)), recipes for potato dishes (esp. Indian), eggplant parmigiana, gazpacho, guacamole, black bean soup, a good meatless onion soup (if such exists), creole tomatoes and okra, paella, gumbo, veg. egg rolls, veg hot & sour soup, and similar things. I'd love to know if such exists. Heather Booth
