An oil that I have not seen mentioned for finishing wood is walnut oil. Walnut oil has the advantage that it dries, in much the same way that boiled linseed or the Danish oils dry. Mineral oil and vegetable oil do not really dry. They also don't really provide much protection for the surface (not an important consideration with a cutting board). If your super market doesn't carry walnut out, check out a health food store. Walnut oil is also an interesting oil for cooking.
