Sure: In the folk/blues arena, I'd suggest you start with the infamous Leadbelly, whose music is the classic standard for 12-string blues. When Pete Seeger, did an instruction record for the instrument, he titled it something like "Playing the 12-String Leadbelly Style," which is a clue to LB's importance. Seeger also does some nice work on the instrument. Other good folkie types who do play 12-string include Michael Cooney, David Rea (a fine Toronto singer), and Bruce Cockburn. In the acoustic-instrumental realm, which overlaps a bit with the above, there's a lot of material. John Fahey is the best-known, I'd suspect; his disciples Leo Kottke and Robbie Basho are also interesting. Some of Leon Red- bone's stuff fits here, too. Getting spacier yet, there's the acoustic jazz material. Here, you'll find the folks who record on Windham Hill Records (Alex de Grassi, et al.), plus such jazz musicians as Pat Metheny and Ralph Towner (who records both solo and with Oregon ((and, before that, with the Paul Winter Consort)) ). There have been lots of rock'n'roll guitarists who have played 12-string electric guitars, but few have done anything that's very different from their six-string material. There are exceptions, though -- Mahavishnu John McLaugh- lin is one, and I'm sure fellow netlanders will mention others if we just give 'em a chance. This ought to give a start on the exhaustive list, though...
