As the flick was called REVENGE of the Jedi until shortly before release, seems to me that the "Jedi" refers to the "Loyal Order of Jedi" or whatever, who finally do it to the Emperor etc....

according to my friend here, the Jedi is referring to Anakin (sic?) Skywalker, as he returns to the good side (i.e. being a Jedi) at the end of the flick.
